Premium Grade Ballyhoo

Our premium ballyhoo, Just Rite is the product of a second generation, 50 year old fish production company, Key Largo Fisheries. Their ballyhoo is fished by one of the finest, most well respected, bally fisherman in the keys. The fresh catch is cooled in a chilled brine slush while on the boat being transported by water to the fish house. No trucks are involved. Just a short boat ride to the first class, waterfront, HACCP approved handling facility. The dedicated ballyhoo center is climate controlled and the process of packing and flash freezing occurs on-site within minutes of the fish being removed from the sea. No other ballyhoo producer can boast of the process speed or the controlled conditions that Just Rite enjoys.
